From The Samling Hotel in the Lake District to the Latymer restaurant in Surrey under Michael Wignall’s mentorship, Tom immersed himself in the world of haute cuisine, continually refining his culinary craft.

Evolution at Adam’s

Joining Adam’s in Birmingham as head chef marked a pivotal moment in Tom’s career. Here, he not only learned the intricacies of managing a team but also discovered his unique culinary identity—a fusion of influences from the renowned chefs he had worked with previously. Under his leadership, Adam’s garnered acclaim, solidifying Tom’s reputation as a formidable culinary talent.

The Birth of Upstairs

In 2021, Tom seized the opportunity to establish his own restaurant, Upstairs by Tom Shepherd, in Lichfield. Despite challenges posed by the pandemic, Tom’s unwavering dedication and culinary prowess shone through. His flavor-driven approach to cooking resonated with diners and critics alike, earning Upstairs a Michelin star within just four months of opening.
