Born and raised in the coastal Tuscan town of Orbetello, Sauro Ricci’s deep connection to nature and agriculture was cultivated by his family’s farming background. From a young age, he developed a profound appreciation for the bounty of the earth, instilling in him a love for vegetables and the culinary arts. After completing his culinary training, Sauro embarked on a transformative journey under the mentorship of renowned chefs, honing his skills and refining his culinary philosophy.

A Fusion of Culinary and Cultural Exploration

In 2010, Sauro embarked on a new chapter in his culinary journey, driven by his curiosity about cultural and dietary diversity. Pursuing a degree in anthropology at the University of Siena, he delved into the study of food’s role in different cultures and societies. His research led him to explore the macrobiotic diet, a holistic approach to nutrition rooted in Asian traditions. Immersing himself in the philosophical and culinary aspects of macrobiotics at the Portuguese Macrobiotic Institute in Lisbon, Sauro gained profound insights into the intersection of food, spirituality, and well-being.

In 2012, Sauro’s path intersected with that of Pietro Leemann, a pioneering chef renowned for his innovative approach to vegetarian cuisine at Joia in Milan. Drawn to Leemann’s vision of haute cuisine infused with mindfulness and sustainability, Sauro joined forces with the esteemed chef, embarking on a culinary journey that would redefine vegetarian gastronomy. Through his collaboration with Leemann, Sauro found a platform to showcase his passion for macrobiotic principles, elevating vegetarian cuisine to new heights of flavor, creativity, and consciousness.

Assuming the role of head chef at Joia in 2016, Sauro Ricci inherited the legacy of excellence established by Pietro Leemann, while infusing his own distinctive style and philosophy into the restaurant’s culinary repertoire.
