Giuseppe di Iorio’s culinary odyssey was ignited by the vibrant sights and scents of the market, coupled with his mother’s discerning eye for quality produce. Today, as the head chef of the Michelin-starred Aroma restaurant in Rome’s Hotel Palazzo Manfredi, his dedication to exceptional ingredients and traditional cooking methods shines through in every dish.
Hailing from Calabria, Giuseppe’s culinary journey began in Rome, where he attended catering college. His formative years were spent apprenticing in local eateries, including a transformative experience at Il Margutta, where he developed a deep appreciation for beautiful food and bold flavors under the guidance of renowned chefs.
Giuseppe’s quest for culinary excellence led him to London, where he honed his skills working alongside Giuseppe Sestito at the Grosvenor restaurant. Further stints in France and the Amalfi coast enriched his culinary repertoire, shaping his evolving philosophy on taste and beauty.
In 2005, Giuseppe returned to Rome to work with his mentor, Giuseppe Sestito, at the Michelin-starred Mirabelle restaurant. Inspired by his mentor’s guidance, Giuseppe seized the opportunity to helm Aroma at Hotel Palazzo Manfredi in 2013, overlooking the iconic Colosseum. The restaurant quickly garnered acclaim, earning a Michelin star in 2015.
At the heart of Giuseppe’s culinary ethos lies a commitment to locally sourced, organic ingredients, ensuring each dish reflects the authentic flavors and aromas of Italy. His dedication to sustainability extends to energy conservation and recycling practices within the restaurant.
Giuseppe’s creative process begins with a reverence for tradition, blending time-honored techniques with innovative ideas to craft dishes that captivate both palate and imagination. Slow-cooked meats feature prominently on Aroma’s menu, embodying Giuseppe’s belief in the power of traditional cooking methods.
